The R H Forschner by Victorinox Chef's Knife features an 10-inch blade that is 2.25-inches wide at the handle. High carbon, stainless steel blade is hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

I recently made a career change into the culinary world, and this knife remains my favorite after 6 months of heavy use and abuse. Whether I'm slicing a cake, carving a turkey, or chopping mushrooms, this is the knife I reach for first. (It's also the knife the other cooks want to borrow most often.)

Most importantly, the knife is extremely sharp - I remember opening the package and finding a knife that was literally razor-sharp. I sharpen it at least once a day, and it seems to re-sharpen more quickly and stay sharp longer than my other knives.

Secondly, the handle it terrific. It is ergononically shaped and is made of a hardened rubber material, so it is much easier to grip than knives with handles of metal, wood, phenolic compound, etc... (you'll really appreciate the handle when dealing with slippery items such as raw chicken or fish).

I received this knife as a Christmas present and so far, I am pleased. What struck me first about this knife is how wonderfully sharp it is. I also own a Wusthoff Santoku (which I love, too) and this knife was just as sharp right out of the box as the Wusthoff was. It is rather comfortable in the hand and the shape of the blade allows for very smooth rocking and chopping action, which is wonderful when you are chopping vegetables. It is also wonderful for carving meats, with its long sharp blade. The grip is slightly larger than I would like, making it a bit more cumbersome to hold than my Wusthoff, but that is not a big issue for me considering the price point of this knife. If price were not an issue and I had to choose between a Wusthoff and a Forschner Fibrox, then I would probably choose a Wusthoff. But being that a Wusthoff of this size would be at least $50 more, then price does come to play. If money is no object, then choose the wonderful German steel of a Wusthoff or look... Read more

I will start off by saying this is a good knife. For less than 70 dollars, you cant get much better. It has a comfortable handle and probably the sharpest blade(for a german profile and steel knife) out of the box; however, it has a few drawbacks. Even with proper care and maintenance( hand washing, proper storage, steeling) it will dull with moderate use in less than a few months. If you have proper sharpening equipment and do it correctly, this isn't much of a problem, as it is easy to sharpen. Some people claim that this is the absolute best knife out there, even compared to the lighter, better balanced, sharper, and longer lasting edgewise Japanese knives.(I'm not just talking about globals and shuns) If you are willing to spend more you can get many better knives from makers such as torijo, misono, massamoto, and mac. If you are looking for a great bargain, good solid knife for home use, this is pretty darn good, but not the best.

I too bought this glove to use with my mandoline slicer, but now that I have it I use it with my microplane and other food graters as well. I thought it might be a bit cumbersome, but it's not at all. I think it's important to remember that this glove is cut RESISTANT, not cut proof.

The glove fits my hand very well, but I can see that it might be too small for others. I normally wear a woman's size small glove. This microplane glove is quite flexible though, and I'm certain it would easily fit a woman's size medium or even large. One man's review here indicates he struggled but managed to get it on his bigger hand. I agree there should be one or two other size options, and this is the only reason I didn't give this a 5-star rating.

It goes without saying that the glove will need cleaning after using it to hold food against a slicer or grater. It is machine washable, but not machine dryable. Here's what I do to clean the glove in between machines... Read more

Although expensive, this glove is a time and hand saver! I use it regularly when slicing horizontally into onions, shallots, etc. to protect me from cuts when the knife blade slips. It also works great for protecting my fingers and fingernails when I grate cheese on a box grater. Using the Microplane glove means that I can grate gruyere right down to the rind and avoid nicking my fingers up or having nail polish chips getting into the food.

I absolutly love this. I bought this to use with my mandolin. It's a piece of mind knowing that in case I slip with the guard, I have this glove as backup. I think in the near future I'll buy another glove for the othr hand, just in case I forget and do something stupid with the other hand! Getting cut is no picnic. For me it takes about a week to heal (minor cuts/no tendons involved) and doing my daily chores takes forever.

Knifes cut well, look great on the kitchen counter but follow care instructions or you will have an ugly looking set of knives. I advised the family to wash knifes in the sink only and dry with a kitchen towel. They should not be placed in the dishwaher. My son did the first part but neglected to dry off the knife. The next morning, the water left on the knife became rust spots. Since they are farely inexpensive, I do not want to return the whole set but will see if I can replace, now 2, of the knives that have rust spots on them. I do like that the back of the package list all the knives and what you use them for in the kitchen, slicing, dicing, trimming meat, etc. I cut that out and have it by the knives so I can use them for their intended purposes.

The knives are extremely sharp. They cut almost effortlessly, and the material and shape of the handles are really comfortable-and don't slip. Seriously, even if your hands are wet, it's still very easy to keep control of the knife. They brighten up my kitchen, but I do wish there was a more neutral color option, like black or white handles. I think this set is perfect because instead of all the steak knives most sets come with, this one comes with 4 paring knives. This makes more sense for my household because we are constantly using the paring knives, but hardly ever use steak knives. With our old set, we were using the steak knives in place of paring knives because there was just one paring knife. This is a perfect combo of the most useful knives. I love it!
